Jalapeño Black Bean Cheeseburger

Whether you’re vegetarian or just looking for a good spicy burger, this Jalapeño Black Bean Cheeseburger is a true crowd-pleaser!

Funnily enough, since my husband and I decided to cut down on meat, the amount of burgers we eat has increased drastically. This is due to the vast amount of amazing veggie burger ideas out there. I have a Pinterest board full of ideas for vegetarian and vegan burgers. Admittedly, it’s a bit of a hit and miss, especially with bean burgers. Getting the taste right is one thing but the texture can be a bit of a challenge too. If you don’t use a binder, for example, your burger will crumble and fall apart. Also, it helps to let veggie burgers rest in the fridge for 20 minutes before cooking them. Quite convenient, actually, it gives you a bit of time to prepare the sides :)

Sometimes, I really want to spice things up! For this Jalapeño Black Bean Cheeseburger I used jalapeños (surprise!) and hot cheese slices. To be honest, cheese slices usually aren’t all that spicy (diary counteracts spiciness) so in the end the burger will give you a nice tingly feel, not a “oh-my-God-my-mouth-is-on-fire”-burn. Just make sure you don’t use too many jalapeños  as they vary in spiciness and some brands may cause more than a little tingle ;)

Instructions
  1. Soak the black beans in water for at least 12h or (ideally) over night or boil according to packaging instructions to soften.
  2. Rinse the black beans and add to a food processor. Blitz until smooth. Finely dice onions, and jalapeños and grate garlic and carrot.
  3. In a large bowl, combine black bean puree, onions, carrot, jalapeños, garlic, breadcrumbs, egg white, coriander and spices. Knead well and form 3 burger patties. Leave to chill in the fridge for 15 minutes or longer. Pre-heat your oven to 180°C.
  4. Place the burger patties on a sheet of baking paper and brush with the oil. Back in the oven for 5-10 minutes until they turn crisp. Then turn them around and bake for another 3 minutes. Place the cheese slices on the patties and bake for another 2 minutes, together with the burger buns, if you like them a little crispy.
  5. Add some ketchup to the burger buns, place the patties on top and add toppings of your liking (e.g. avocado, tomato, peppers...).
